Course Objective
To enable the student to learn the terms of food and beverage and to apply them in the field of gastronomy.
Brief Content of the Course
Knows the tools and their features, terms and contents used in industrial kitchens. Knows the kitchen tools specific to hotel kitchens. The hotel kitchen knows the terms and ingredients. Understands Cooking Equipment. Recognizes joinery equipment. Becomes aware of using sustainable cuisine and sustainable food and beverages while protecting the environment.
